The extra virgin olive oil is a fundamental element of the Mediterranean diet and is synonymous of taste and health. The extra virgin olive oil contains powerful antioxidants, vitamin E and polyphenol, substances that have the task of defending cells from early aging and from some tumor types. Extra virgin olive oil is the best dressing due to the balanced fats since it is poor of saturated fat, which is the main cause of high blood cholesterol. It is instead rich of monounsaturated fats (oleic acid) and it contains essential polyunsaturated fats W6 and W3. These fats are very similar to mother’s milk and positively influence our bodies.
