Champagne Pierre Gimonnet – A Centuries-Old History

Maison Pierre Gimonnet, is family-run and co-managed by Olivier and Didier Gimonnet, two of the four children of Michel Gimonnet and Françoise Gimonnet Larmandier.

Still dominated by a peasant soul and convinced that owning a vineyard of property is the prerequisite for mastering the development of wines, the family knows precisely all their plots, if not all the vines, their ability to produce this and that typicality.

The perfect knowledge of the multiple plots of vines, the know-how handed down from previous generations, the concern for perfection and the constant questioning of climate change have been the secret of the consistency of the House’s wines for decades.

Straw yellow with greenish reflections. The nose is initially floral, and then evolves towards a citrus fruitiness and closes with the classic hint of yeast. Perfect for formal and refined aperitifs. Excellent to combine with raw seafood, but also ideal with a good mozzarella. On the palate it is lively and light, refined and pure, with an excellent length.

Vinification

The grapes are harvested manually and pressed. Alcoholic fermentation takes place at a controlled temperature and then malolactic fermentation begins. Aging for 6 to 8 months in the bottle and cold stabilization. Subsequently the liquids are lightly filtered on clay. Dosage from 5.5 to 6 grams liters of sugar.
